Autumn Acorn Squash

1 medium acorn squash (about 1 1/2 pounds)
1/4 cup maple syrup or brown sugar
2 T. butter or margarine, melted
1/2 t. finely shredded orange peel
1/8 t. ground cinnamon and/or ground nutmeg

Cut squash in half lengthwise; remove and discard the seeds. Place the squash halves, cut side down, in a 2-quart baking dish. Bake in 350 degree oven for 45 minutes. Turn the squash halves cut side up.

While squash is baking, stir together maple syrup/brown sugar, butter, orange peel and cinnamon/nutmeg. Spoon the mixture into centers of squash halves after you turn them. Continue to bake the squash, with the autumn syrup,  for 20-25 minutes more or until squash is tender.

Squash is an excellent source of vitamin A, vitamin C, iron and fiber. Delicious and good for you!
