Quick and Easy Homemade Salsa

2 cups cooked black beans, or 1 can (15 ounces) black beans, drained and rinsed

3 medium-size ripe tomatoes, finely diced

1 red bell pepper; cored, seeded, and finely diced

1 fresh jalapeno or serrano chile, cut into very thin slices

1 medium-size red onion, finely diced

1/2 cup finely chopped cilantro

1/3 cup extra-virgin olive oil

1/3 cup fresh lime juice (l lime)

1 teaspoon salt

1/4 teaspoon cayenne, or to taste

Combine the black beans, tomatoes, red bell pepper, jalapeno or serrano chile, onion, and cilantro in a large bowl and mix well.

In a small bowl, combine the olive oil, lime juice, salt, and cayenne and whisk together.

Pour the olive oil mixture over the bean mixture and mix well. Let stand for at least 1 hour before serving so the flavors can blend. Or you can make this a day ahead and keep it covered in the refrigerator. Let the salsa come to room temperature to best enjoy.
