Simple Spaghetti Squash
1 medium spaghetti squash (2-3 lbs.)
1/2 cup grated Parmesan cheese
2-3 T. butter or margarine, cut up
salt to taste (optional)
Cut the spaghetti squash lengthwise in half. Remove and discard seeds. Place the halves, cut side down into a large baking dish. Using a fork, prick the skin in multiple places. Bake in a 350 degree oven for 30-40 minutes or until tender.
Remove the squash pulp from the shell by scraping it with a fork. It will be stringy and look like spaghetti noodles. Toss pulp with 1/4 cup of the Parmesan cheese, butter and salt (optional). Sprinkle with the remaining 1/4 cup Parmesan cheese.
Serve as a side dish, with a homemade spaghetti sauce or make your own creation!
