Roasted Gourmet Pumpkin Seeds
1 1/2 cups pumpkin seeds
2 teaspoons olive oil (melted butter or vegetable oil also work well)
salt to taste
Seasonings to Taste:
Garlic power or garlic salt
Cayenne pepper
Chili powder
Mexican style chili lime seasoning
Italian seasoning or other herbs
Grated hard cheese such as Parmesan
Gourmet Seasonings:
Pumpkin Pie – Cinnamon, ground ginger and pinch of nutmeg, butter
Italian – Italian seasoning blend, parmesan cheese, olive oil, salt and pepper
Greek – Lemon pepper seasoning blend, oregano, salt, olive oil
Buffalo Wings – Butter, Tabasco Sauce, salt
Preheat oven to 300 degrees. Sort out your seeds. It’s alright to leave some strings and pulp, but clean off most of it.
Toss pumpkin seeds in a bowl with the olive oil or melted butter and seasonings of your choice. Spread pumpkin seeds in a single layer on an oiled baking sheet.
Bake for about 30 minutes, stirring occasionally, until golden brown.
Pumpkin seeds are rich in fiber, as well as vitamins B and E, so they make healthy snacks!
