Stuffed Zucchini

6 medium zucchini, cooked

1 lb. hamburger

1 cup uncooked rice

1 1/2 teaspoon salt

1/4 teaspoon pepper

1 qt. tomatoes

2 mint leaves

Scoop centers out of zucchini. Mix all remaining ingredients except tomatoes and mint leaves; stuff zucchini. Stand upright in heavy skillet; pour tomatoes over top. Add mint leaves. Cook slowly for 1 hour or until tender.
