Zucchini Casserole

1 large zucchini, cut in small pieces
3 Tablespoons butter
3 Tablespoons flour
3 large tomatoes, peeled and chopped
1 green pepper, chopped
1 small onion chopped
Cracker crumbs
Grated cheese for topping

Boil zucchini until tender and set aside. Melt butter and blend flour; then add tomatoes, green pepper, and onion. Season and simmer 5 minutes. Place zucchini in well-buttered casserole. Pour tomato mixture over zucchini, lightly cover with bread or cracker crumbs, and dot with cheese. Bake at 350 degrees for 30 minutes. Serves 4.
